A Dash of Ginger :: Fresh Blueberry Paleo Bread

My husband and I made a commitment to eat healthier in 2015. Last year around this time, I found out that I had a very severe Gluten Intolerance, and since then my diet has drastically changed. It was terribly disappointing to learn that I could no longer indulge in my favorite foods: beer, pizza, burritos, fried zucchini, and my husbands homemade chocolate chip cookies. What a nightmare! However, as the year progressed, I learned there are MANY alternative ways to make all of your favorite foods, so the thought that I was going to waste away to nothing was short lived.

Flash forward to a year later, now I am on to new challenges including trying out a Paleo diet. I should mention, I am not a big breakfast person. I am a coffee for breakfast kind of gal. I usually have a slice of toast with Nutella or a banana accompanied by my french press coffee. Well, with Paleo, you really can't have your quick and easy slice of toast for breakfast, so I had to get creative. I should also mention that I don't eat pork. So no bacon, ham, sausage, etc. (Eating out at restaurants for breakfast is a nightmare for me. "Hi, what's on your menu that contains no gluten and no pork, oh and I don't really like eggs?" Reply: "Ugh, water?") I am not a picky eater. Really, I'm not. I am just a selective breakfast eater as I would like to call it.

With all this in mind, I did what any social media savvy girl would do, I went to Pinterest. And then I found it. Paleo bread. YES! On my short path to being a Paleo eater, this of course was my first meal. Let me break down for you my version of a tasty gluten free, Paleo treat that is good any time of day.

You will need:

2 cups almond flour
3 tsp coconut flour
3 eggs
2 tbsp coconut oil (if solid, melt it)
3 tbsp honey
1/3 cup apple sauce (sugar free)
1 tsp vanilla extract
1/2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
A few dashes of sea salt
Fresh blueberries OR your favorite fruit (carrots, over-ripe banana, cranberry, etc.)

Optional: walnuts, or a combination of fruits

Prepare: 

1. Pre-heat oven to 350 degrees
2. Mix together all of the dry ingredients
3. Add in the wet ingredients
4. Add in blueberries
5. Grease baking pan (I used PAM Olive Oil Spray)
6. Pour in batter
7. Bake for 20-25 minutes
8. Let cool
9. ENJOY!


This is a very simple and quick recipe, and tastes delicious. The best part is, there is no sugar, butter, or any other fattening ingredient you use while baking.
